Don’t spend Christmas morning peeling potatoes, make our freeze-ahead roasties

Ingredients
  • 2 ½kg Desirée or King Edward potato
  • 2 tbsp flour
  • 5 tbsp goose fat or sunflower oil

STEP: 1 Skin the potatoes, and cut them in halves, or quarters if large. Take a large pan of water and bring it to a boil, add some salt, then head the potatoes into the pan. Bring back to the boil to cook for 7 mins. Drain well, then return to the pan and dust over the flour. Cover the pan with a lid, now pick up the pan using oven gloves or a tea towel and give it some hard shakes so that the potatoes get smacked around (this will make them nice and crisp).

STEP: 2 Turn the oven to 190C/fan 170C/gas 5. Scoop the goose fat or sunflower oil onto a large, lipped baking tray and leave to heat on the top shelf of the oven for about 5 minutes. Carefully drag out the tray, now make sure its surface is equally coated with the fat, then tip on the potatoes. Roast for about 20 mins, now turn up the oven to 220C/fan 200C/gas 7 and roast for the next 30 mins, turning the potatoes only once, until golden and crisp. Powder a little salt and serve straight away.
