Roast potatoes with paprika

Try these tasty and healthy roast potatoes. Smoked paprika adds flavour and we have a top tip for a crispy finish. Ideal for Sunday lunch.

Ingredients
  • 1 ½kg floury potatoes (such as Maris Piper, King Edward, or Desirée), peeled and cut into halves or quarters, depending on size
  • 100ml olive oil
  • 2 tsp smoked paprika
Roast potatoes with paprika method

Step: 1 Turn oven to 200C/180C fan/gas 6. In a pan of cold salted water add potatoes, bring to a boil, then simmer for 5 mins until partly soften. Strain and steam dry for some minutes in a colander.

Step: 2 Back the potatoes to the saucepan, add oil, paprika, and a good deal of salt and pepper. Cover with a lid, then toss the potatoes to roughen the edges and thoroughly coat them in the paprika and oil. Tip the potatoes into a large roasting tin, be sure they are evenly spaced apart. Drag in all the fluffy potato mess – these make the best crispy bits!

Step: 3 Roast the potatoes for about 1 hr 15 mins, turning halfway, until extremely fleecy and crisp.
