Rick’s Big Bad Bean Burrito

Ingredients

  • ½ cup vegetarian refried beans
  • 1 large whole-wheat tortilla
  • 2 romaine lettuce leaves
  • ½ avocado, peeled and sliced
  • ¼ cup fresh pico de gallo
Rick’s Big Bad Bean Burrito method

Step: 1 Take a saucepan and mix refried beans in over medium-low heat for 2 to 4 minutes or until hot. Then heat the tortilla in a skillet over low heat for 1 to 2 minutes or till softened. Shift the tortilla to a plate.

Step: 2 Make a layer of lettuce onto the tortilla. Lay out warmed refried beans, avocado slices, and pico de gallo on top of lettuce. Then roll the tortilla around the fillings into a burrito shape, and serve.
