Step: 1 Pound together with 1 tsp and all the marinade ingredients using a large pestle and mortar, or chop in a mini chopper to make a loose paste. Slash each piece of chicken a few times, to coat in the marinade tip them into a bowl. Cover and chill for around 1 hour or up to 24 hours.
Step: 2 Warm the oven to 220C/200C fan/gas 7. Along with the chicken, marinade and potatoes tip into a roasting tin. Toss them together, and set out the chicken on top of potatoes, thighs skin-side up. Now roast for about 35-40 mins till the chicken has browned.
Step: 3 Take out the tin from the oven and mix in the peppers with potatoes, thrash the chicken in some of the juices in the tin then turn the drumsticks. Snuggle the cherry tomatoes in between the chicken and roast for the next 20-25 mins till the chicken is cooked throughout, the skin becomes crispy and the vegetables are nicely roasted. Disperse with the coriander and a few flaky sea salt, if you wish, and serve right from the tin with the buttered corn beside.
