Sizzled sprouts with pistachios and pomegranate

Add a deliciously different side dish to your Christmas spread with these pan-fried sprouts and juicy pomegranate seeds, drizzled with pomegranate molasses

Ingredients
  • 3 tbsp olive oil
  • 500g Brussels sprouts, halved
  • 50g pistachios, roughly chopped
  • 100g pomegranate seeds
  • pomegranate molasses, to drizzle (optional)

Step: 1 In a large frying pan warm the oil over medium-high heat. Then place the sprouts in the pan, cut side down, and let them fry for around 10-15 mins, tossing at times. If they become just lightly brown, then keep cooking for the next 5 mins till blistered.

Step: 2 Disperse the pistachios over and stir-fry till toasted. Turn off the heat and stir throughout the pomegranate seeds. Season it with salt and settle into a serving dish. Fine rain with some pomegranate molasses, (optional).
