Carrot & swede mash with brown butter & thyme

Ingredients

Step: 1 Liquefy the butter in a small-sized frying pan over low heat, with the thyme and ½ tsp black pepper freshly ground till the butter starts to foam. Take off from the heat.
Step: 2 Drive a large-sized pan of salted water to a boil, then tip in the carrots, and swede and gently boil for around 30-40 mins till becomes tender. Mash it well. While still hot, mix it through the butter and serve straightaway. (This can be kept chilled for about 2 days or frozen for up to 30 days).
