Italian stuffed chicken

Italian stuffed chicken Method
Step: 1 Warm oven to 220C/fan 200C/gas 7. Strike the olives or sundried tomatoes, garlic, and nearly all the herbs into the cheese, and then season. Knife an incision along the side of each chicken breast, and use your knife to open it out into a pocket.
Step: 2 Then with a quarter of the cheese mix stuff each breast, and press to close. Take up onto a greased baking dish. Season the top of the chicken, and over the top of each piece of chicken overlap tomato slices. Season, and sprinkle with the leftover herbs. Fine rain with olive oil.
Step: 3 Now roast the chicken for about 20 mins till the chicken looks golden around the edges and the tomatoes are a bit shrivelled. You can serve it with a green salad and crusty bread to mop up the juices or as you like, ( here I did some adding with the topping, of my own choice).
