Easy Mexican Sopes

The Mexican sopes are a super hit at any festive. You can serve this appetizer with a good variety of toppings like beans, cheese, and meat.

Easy Mexican Sopes method
Step: 1 Whip together masa harina and salt in a bowl. Stir in enough water till the dough is smooth and holds together.
Step: 2 Now form the dough into twelve 2-inch balls. Then put the balls onto parchment paper and flatten them into 1/2-inch thick circles.
Step: 3 Take a deep fryer or large saucepan and heat oil to 400 degrees F (200 degrees C).
Step: 4 Working in groups, then fry some sopes at a time for about 30 seconds per side or till lightly browned. Shift to a paper towel-lined plate with tongs and let cool for 2 to 3 minutes or just until they can be handled. Pinch together the edges of each sope to resemble it like a little boat.
Step: 5 Put back the sopes to the hot oil and fry for 1 to 2 more minutes or until golden and cooked through, then drain on paper towels.
