Mexican Casserole

Try this delicious Small dinner pie made with salsa, tortillas, refried beans, cheese, and onions.

Ingredients
  • 1 (16-ounce) can of refried beans
  • ¾ onion, diced
  • 5 (10 inch) flour tortillas
  • 1 cup salsa
  • 2 cups shredded Cheddar or Colby Jack cheese
Mexican Casserole method

Step: 1 Warm up the oven to 375 degrees F (190 degrees C). With a non-stick cooking spray, spray a 9-inch pie pan.

Step: 2 Take a saucepan, and cook refried beans and onions (just to soften them) on medium-high heat for around 5 minutes.

Step: 3 In the bottom of the greased pan place one tortilla. Spread concerning 1/3 cup of the bean mixture over it. Layer some tablespoons of salsa over this. Now put another tortilla over the salsa, and add more of the bean mixture.

Step: 4 Go after the beans with a big handful of cheese, and lay them out evenly. redo the layers, spreading the ingredients fairly over the tortillas. make sure to use lots of salsa and cheese on the top layer

Step: 5 Bake till the cheese is melted, about 15 to 20 minutes, and serve.
