Papas con Chorizo (Mexican Chorizo and Potatoes)

Ingredients

  • 1 ¼ pounds Yukon gold potatoes, cut into 3/4-inch cubes
  • ¾ pound fresh Mexican chorizo sausage, casing removed
  • vegetable oil, as needed
  • 1 small onion, diced
  • salt and ground black pepper to taste

Step: 1 Take a large pot put potatoes into and cover with salted water; drive to a boil. Lessen the heat to medium-low and simmer for about 5 to 6 minutes or till it becomes a little soft. Drain.

Step: 2 Now cook chorizo in a big skillet over medium-high heat for 5 to 6 minutes, breaking up any large chunks, or till browned. Take off the chorizo to a paper towel-lined plate using a slotted spoon, keeping about 1 tablespoon of grease in the skillet. Add some oil if necessary to make up 1 tablespoon.

Step: 3 Now cook onion in the same skillet over medium heat, stirring at times, till they begin to soften and brown,. Add potatoes to the skillet and sauté for 5 to 7 minutes or until the potatoes are lightly browned. Mix in chorizo and season with salt and pepper, now serve.
