Simple Mexican Quinoa

This can be your new favorite quinoa dish. It is super simple and delicious.

Ingredients

  • 2 cups water
  • 1 cup quinoa
  • 1 (12-ounce) package of frozen corn and black bean vegetable blend (such as Archer Farms®)
Simple Mexican Quinoa method

Step: 1 In a saucepan drive water and quinoa to a boil. Lessen heat to medium-low, lid, and simmer for 15 to 20 minutes till quinoa becomes tender and water is absorbed.

Step: 2 Put the vegetable blend in a microwave-safe bowl; microwave for about 5 minutes till heated through, Mix vegetable blend into quinoa, and serve.
