The classic beef burger is always a must-have at the barbecue. To make it a little more special pack blue cheese in the center and serve it as your favorite trappings.

Ingredients
  • 400g beef mince
  • 1 banana shallot, finely chopped
  • 1 tbsp strong horseradish sauce
  • 1 tsp dried mixed herbs
  • 1 large garlic clove, finely grated
  • 40g blue cheese (optional)
  • 2 tsp vegetable oil
  • 4 burger buns, split
  • iceberg lettuce leaves, tomato slices, and relish, to serve
To make it a little more special Method

Step: 1 Tip into a bowl beef mince, shallot, horseradish sauce, herbs, and garlic, and season them well with salt and black pepper. Unite well everything with your hands, squeezing the mixture frequently through your fingers to help it tie up together.

Step: 2 Split the mixture into four parts and shape each of them into a 3cm-thick patty. Then press a small 50p-sized slice of blue cheese in the middle of each patty, if using, then pack the meat around it to enclose the cheese – during the cooking this will melt.

Step: 3 Set the burgers on a plate, then cover and chill them for around minutes or overnight. Let’s light the barbecue and wait for the coals to turn in ashen. Or, you can heat a gas barbecue to medium.

Step: 4 Fairly Oil the burger patties all around and cook for about 5 mins till they just starting to char. Be careful to flip them over and cook for the next 4-5 mins (for medium) or longer if you like better well done. Put the burgers on a board and let them rest for a little before serving. Instead, fry burgers over medium heat for about 4-5 mins on every side till cooked through (a probe thermometer should read 70C).

Step: 5 Burgers should be served in the buns with lettuce, tomato slices, and relish, or any other of your choice.
