Charred brussels sprouts with Marmite butter

Marmite and brussels sprouts may sound like an unusual combination, but trust us: it works. Try this recipe for your next Christmas feast or as a winter side dish

Ingredients
  • 100g unsalted butter, softened
  • 3 tsp Marmite
  • 500g brussels sprouts, halved

Step: 1 Whip the butter and Marmite together until smooth, and then form it into a log on a piece of baking parchment, roll it up, and twist the ends so that they resemble Christmas crackers. Chill in the fridge until you need it. (This can be kept in the fridge in the fridge for about a week and two months in the freezer).

Step: 2 For about 3-4 mins boil the Brussels sprouts, now drain and leave to steam-dry. Heat a non-stick frying pan, add the sprouts, and dry-fry them for about 4-5 mins or until they start to blacken on the edges cut sides, and at the cut sides. Take off the pan from the heat, and add a chunk of the Marmite butter (and keep the rest for another day). Fry until the butter has melted and wave the pan gently to coat the sprouts. flavour with pepper, and taste before adding salt, and serve.
