cornish spiced compote

Make this gorgeous spiced twist on apple sauce, which can be served beside your turkey at Festives.

Ingredients
  • 5 bramley apples, peeled and sliced
  • 50g caster sugar
  • 1 lemon, juiced
  • 150ml apple cider
  • pinch of ground nutmeg
  • pinch of allspice
  • 1-star anise
  • 7 Granny Smith apples, peeled and diced
  • 2 thyme sprigs, leaves picked

Step: 1 Put a pan over medium heat and cook the Bramley apples, sugar, lemon juice, 100ml of the cider, and all the spices, uncovered, for around 8-10 mins till soft. Take out the star anise.

Step: 2 To a purée blend it, and then return to the pan. Now add the Granny Smith apples and cook over low heat for about one hour till they become soft but still with a bit of a bite. (This can be kept chilled for 3 days). Before serving, reheat if chilled and stir to mix through the thyme and left cider.
