Dorset apple traybake

Easy-to-make and perfect apple cake that you can cut into bars or squares to serve as a great teatime treat.

Ingredients
  • 225g butter, softened, plus extra for the tin
  • 450g cooking apples (such as Bramley)
  • ½ lemon, juiced
  • 280g golden caster sugar
  • 4 eggs
  • 2 tsp vanilla extract
  • 350g self-raising flour
  • 2 tsp baking powder
  • demerara sugar, to sprinkle

Step: 1 Warm the oven to 180C/160C fan/gas 4. Then butter with a brush and line a rectangular baking tin (approx 27 x 20cm) with baking parchment. Skin, core, and thinly slice the apples, now squash over the lemon juice, and put it aside.

Step: 2 Take a large bowl and add the butter, caster sugar, eggs, vanilla, flour, and baking powder and mix well till smooth. Lay out half the mixture into the arranged tin. Organize half the apples over the top of the mixture, now redo the layers. Scatter over the demera sugar.

Step: 3 Bake it for around 45-50 mins till it looks golden in color and springy to the touch. Let it cool for just 10 minutes, and then turn it out from the tin and take off the paper. Knife into bars or squares as you like to serve!
