Easy smoked turkey crown

Step: 1 Mix the paprika, dried herbs, and lots of ground pepper with 1 tbsp flaky sea salt, up to two days ahead. Season the turkey crown with half of the herby salt mixture, and then cover. Mix the leftover herby salt mixture with butter and chill.
Step: 2 To cook the turkey, warm up the oven to 190C/170C fan/gas 5. Rub the herby butter all over the crown, working it below the skin. Put the crown on a rack in a big roasting tin, skin-side up, and cook for about 1 hr 30 mins, battering with buttery juices every 30 mins till the skin is crispy and the turkey is thoroughly cooked.
Step: 3 Take out the turkey from the oven and put it aside. Now use a small sheet of foil to make an open package of the wood chips. Set the package in a dry frying pan and heat till it smoking, now transfer it to the roasting tin. In a large tent of foil cover everything to trap the smoke and let the turkey rest for about 20 mins before unwrapping and carving. Save juices from the tin to make a smoky gravy, and serve.
