Golden goose fat potatoes & parsnips

Step: 1 Into a large pan of cold salted water tip potatoes and drive it to a boil. Lessen the heat a little and keep the water bubbling gently for 3 mins, after that add the parsnips and continue gently boiling for about 3 mins more. Drain everything and let it become cool enough to handle, and then separate the parsnips and the potatoes.h
Step: 2 Warm oven to 200C/180C fan/gas 6 with a big roasting tin containing goose fat inside. Take out the tin from the oven when the goose fat is hot. Tip in the potatoes Carefully and turn them so they’re fully coated in fat. Put back the tin in the oven and leave it undisturbed for 1 hr. Take out the tin from the oven, then add parsnips and softly turn everything together.
Step: 3 Rise oven temperature to 220C/200C fan/gas 8. Roast everything for around 20 mins, and then turn again the parsnips and potatoes with rosemary, (if using), and roast for around another 15 mins till everything becomes golden and crispy. Dust over with sea salt and scoop into a warm serving tray, then serve.
