Time to upgrade your carrots with the help of honey, chili, cinnamon, and coriander. This makes an impressive side dish for the festive dinner table.

Ingredients
  • 600g carrots, chopped into batons
  • 1 tsp coriander seeds
  • ½ tsp chilli flakes
  • ½ tsp ground cinnamon
  • 5 tbsp honey
  • small handful of coriander, chopped (optional)

Step: 1 Into a microwave-safe bowl tip the carrot batons along with 2 tbsp water. Cover and cook for about 9 mins on high till the carrots get easily pierced with a fork. Put aside.

Step: 2 For now, crush the coriander seeds using pestle and mortar or in a solid bowl with the end of a rolling pin. Mix in the chilli flakes, cinnamon and a great pinch of sea salt flakes. Dribble the honey into a small microwavable bowl and mix in the spice mixture. Then, microwave the spiced honey for at least 30 seconds. Spill this over the carrots and toss to unite. Garnish with coriander, (if using), and serve straight away.
