Juniper & apple red cabbage

Try this twist on braised cabbage for Christmas Day, with juniper berries, orange zest, red onion, and red apple for festive color and flavor.

Ingredients
  • 1 ½kg red cabbage, quartered, tough core removed
  • 2 red onions, sliced
  • 4 red apples, peeled, cored and chopped
  • 1 orange, zested
  • 2 tsp juniper berries, lightly crushed
  • 1 tbsp light soft brown sugar
  • 60ml cider vinegar
  • 250ml cloudy apple juice
  • 25g butter

Step: 1 Finely slice the red cabbage, and put it into a large saucepan along with the rest of the ingredients.

Step: 2 Lead to a boil, keep stirring, then cover and cook over low heat for about one hour or until tender and the liquid has been absorbed, stirring occasionally. Flavor to taste. (It can be made ahead, covered, and chilled for about 2 days or frozen for up to 30 days. Reheat in a microwave or pan) and serve.
