rich and simple french onion soup

I’ve tried French onion soup in restaurants for years, but none can compare to this recipe for deliciousness and simplicity of preparation.

Ingredients
  • ½ cup unsalted butter
  • 2 tablespoons olive oil
  • 4 cups sliced onions
  • 5 cups beef broth
  • 2 tablespoons dry sherry
  • 1 teaspoon dried thyme
  • 1 pinch salt and pepper to taste
  • 4 slices French bread
  • 4 slices provolone cheese
  • 2 slices Swiss cheese, diced
  • ¼ cup grated Parmesan cheese

Step: 1 Assemble all the ingredients, and melt the butter with olive oil over medium heat in an 8-quart stock pot. Then add the onions to the butter and continue stirring till tender and translucent. But do not brown the onions.

Step: 2 Now add the beef broth, sherry, and thyme. Season with salt and pepper. Let it gently boil for about 30 minutes.

Step: 3 For now, preheat the oven’s broiler.

Step: 4 Then ladle the soup into oven-safe serving bowls and put one slice of bread on top of each ( if you prefer so bread may be broken into pieces). Surface each slice of bread with a slice of provolone, 1/2 slice of diced Swiss, and 1 tablespoon of Parmesan cheese.

Step: 5 Set the bowls on a cookie sheet and cook in the preheated oven for about 2 to 3 minutes till the cheese bubbles and browns a little.

Serve it hot and enjoy this yumm!
