Ingredients
roast turkey breast Method
Step: 1 Take out the turkey breast from the fridge and let it come to room temperature at least for an hour.
Step: 2 Turn oven to 190C/170C fan/gas 5. Place a rack inside an oven tray with the carrots and onions underneath, or you can arrange the veg inside an ovenproof frying pan.
Step: 3 Measure the weight of turkey breast and totalize 40 mins per kilo, plus an additional 20 minutes.
Step: 4 Polish the butter over the skin and flavour well. Place the turkey breast on the rack or rest it in the pan on top of the veg.
Step: 5 Spill in enough water to cover the veg and coat the whole tin or pan with the cover of foil.
Step: 6 Roast for the granted time, take the foil off the end to brown the skin. Test with the point of a knife and check if the point feels hot as you pull it out (be careful) and the juices run clear. If having a thermometer then it should read 65-70C. If the joint looks to be underdone, then put it back in the oven for 10 minutes.
Step: 7 Let the turkey rest for about 20 mins somewhere warm, keep cooking so the final internal temperature will rise close to 70C, or maybe above that. If you skip this step then the juices will run out as you cut so be careful.
Step: 8 In the bottom of the tin use the strained veg and liquid and the juices from carving to add to this gravy, if you like, now serve with the turkey and veg.
