Spicy Honey-Glazed Ham

Spicy Honey-Glazed Ham Method

STEP 1: About an hour before baking take the ham to room temperature.

STEP 2: Place an oven rack in the lowest position; warm up to 350 degrees F. Cut off any skin from the ham,
leaving a 1/4-inch layer of fat. Srap the fat with a sharp knife in a 1-inch crosshatch
pattern without cutting between the meat.
Set the ham flat-side down in a roasting pan and add the chicken breastpin to the pan.
Cover with foil and bake for 11/2 hours.

STEP 3: For now, make the glaze: beat the honey, brown sugar, mustards, vinegar, hot sauce, thyme, and red paper flakes in a medium
bowl. Set 3/4th cup of the glaze aside in a separate bowl for serving.

STEP 4: Take the ham out of the oven, Scrap the foil, and brush with about one-quarter of the remaining glaze.
Resume baking, brushing with glaze and the pan juices every 30 mins, until the ham is deep reddish-brown and a
thermometer addition into the center registers 140 degrees F, 1 to 11/2 more hours.
(add 1/2 cup water to the pan if the juices dry
