TURKEY CROWN WITH ROAST GARLIC AND PANCETTA

ingredients
  • 1 Turkey crown (about 3 pounds)
  • 6cloves of garlic
  • 4 ounces of pancetta, diced
  • 1 cup of breadcrumbs
  • 1/4 cup of grated parmesan cheese
  • 2 tbsp of chopped fresh parsley
  • salt and pepper to taste
  • 2 tbsp of olive oil
method

Step: 1 Heat the oven to 350 F (175c). Cut a small slit in each garlic clove and roast them in the oven for 50 mins.


Step: 2 In a pan, cook the pancetta until crispy. Remove from heat and let it cool. Take a bowl, and unify the breadcrumbs, parmesan cheese, parsley, salt, and paper in it.


Step: 3 Squash the softened garlic cloves out of their skins and add them to the breadcrumb mixture through with the cooked pancetta. Put everything together until well combined.


Step: 4 Massage the turkey crown with salt and paper, and Stuff the turkey crown with the breadcrumb mixture, depressing it softly into the pocket.


Step: 5 Set the turkey crown on a roasting tray and spray with olive oil. Roast in the preheated oven for about 2 hours, or till the internal temperature hits 165 F(75C).


Step: 6 Set the turkey aside 15 mins before carving, after removing from the oven. Serve the turkey crown with the roast garlic and pancetta stuffing.
