ultimate twice -baked potatoes

These twice-baked potatoes are always a big hit! I’ve been making these for my family for years — they make a wonderful side dish for any meal and are tremendously heated up the next day for lunch!

Ingredients

  • 4 large baking potatoes
  • 8 slices bacon
  • 1 cup sour cream
  • ½ cup milk
  • 4 tablespoons butter
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 cup shredded Cheddar cheese, divided
  • 8 green onions, sliced, divided

Step: 1 Assemble the ingredients and then preheat the oven to 350 degrees F (175 degrees C).

Step: 2 Now bake the potatoes in the preheated oven for about 1 hour until tender, this depends on the size of the potatoes. Put the potatoes aside till cool enough to handle.

Step: 3 For now, slice the potatoes in half longwise take a large bowl to scoop out the flesh; and save the skins.

Step: 4 Add into the potato the sour cream, milk, butter, salt, pepper, 1/2 cup cheese, and 1/2 of the green onions; mix it with a hand mixer till it looks well blended and creamy.

Step: 5 Now into the potato skins spoon the mixture; top each of them with the remaining cheese, and green onions.

Step: 6 Place back the potatoes to the preheated oven and continue baking for about 15 minutes till the cheese is melted, Serve Hot!
