Step: 1 Warm the oven to 220C/200C fan/gas 7. Take a large, deep roasting tin tip into the oil and put it in the oven to heat up for around 20 minutes. Skin the potatoes, and then cut in half if small, or quarters if it’s large. Now tip them into a pan of well-salted cold water and drive it to a boil. Boil for about 8 mins or till almost tender, and then drain. Let it steam-dry for at least 10 minutes, after that carefully shake up to fluff the potatoes a bit.
Step: 2 Take out the roasting tin from the oven, spoon in the yeast extract, and gently mix into the oil. Now add the potatoes and lightly turn them to coat. Dust over the flour and season with ¼ tsp each of salt and pepper, and toss them again. Roast them for 1 hr-1 hr 15 mins till golden, turning the potatoes a little times to make sure even browning. Serve right away.
