Step: 1 Warm oven to 200C/180C fan/gas 6. Mash 3 big black bananas peeled with a fork, and then mix it well with 100g brown sugar and 75g vegetable or sunflower oil.
Step: 2 Now add 225g plain flour, 3 tsp cinnamon or mixed spice, and 3 heaped tsp baking powder, and mix well. Add 50g dried fruit or nuts, (optional).
Step: 3 Bake it in an oiled, lined 2lb loaf tin for around 20 minutes. Keep checking and cover with foil if the cake is browning.
Step: 4 Then bake for the next 20 minutes, or till a skewer comes clean out.
Step: 5 Let it cool a little before slicing. This is delicious when freshly baked but it develops a lovely gooey quality the day after.
